Pecan Broccoli


  • Broccoli florets
  • Light butter
  • Chopped toasted pecans
  • Baby carrots
  • Salt and pepper to taste


  1. Cook broccoli in microwave with a small amount of water for 3 minutes or until slightly al dente. Remove from container with slotted spoon and place in a bowl of iced water to stop cooking. Then dry on a paper towel.
  2. Cook carrots separately till they have a slight crunch. Dry on a paper towel. May be prepared ahead to this point.
  3. Melt butter in a skillet. After butter browns to a nutty flavor (do not burn), add broccoli florets, carrots, pecans and salt and pepper and toss till warm and coated with butter.

Serve while warm. Precise amounts are not given. You can adjust them to feed an army or just one.
