Ingredients
- 2 cups cooked black beans
- 1 cup Del Monte fresh summer corn
- 1 large carrot, sliced
- 1 rib of celery, sliced
- 6 tablespoons red onion, chopped
- 6 tablespoons green bell pepper, chopped
- 6 tablespoons red pepper, chopped
- 2 scallions, chopped
- 9 teaspoons balsamic vinegar
- 9 teaspoons olive oil
- 1 cup
- ⅔ teaspoon oregano
- ⅔ teaspoon basil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1½ teaspoon minced garlic
- 6 tablespoons minced fresh cilantro
Preparation
- In large bowl, combine beans, carrots, celery, red onion, green and red peppers, and green onions.
- Mix remaining ingredients and pour over bean mixture. Mix well.
- Let marinate for 2 hours
